Grilling with Crown Verity is a recipe series that will reveal how you and your grill can cook anything like the pros.

Pesce al Cartoccio

This recipe comes all the way from Dominican Republic. A businessman reveals his passion for cooking. My father. He has generously agreed to share his Pesce al Cartoccio recipe with us. My father lives in Dominican Republic, hence the love for fish, and one side of his family is Italian, hence the name of the dish. Pesce al cartoccio is just fish in parchment paper, but, of course, we feel the need to show our Italian heritage. Don't judge.

This recipe is as simple as it gets, but the flavor of the fish when cooked this way is incomparable. So, get ready to impress your guests with this simple Italian recipe.

First, you have to choose your fish. The important thing is to choose any fish with firm meat. The two best choices are mahi mahi or wahoo. Once you have your fish fillet you are ready to go.


Place a sheet of parchment paper on top of an aluminum foil sheet. Put the fish fillet on top of both sheets. The parchment paper won't let the fish stick to the aluminum foil. Now, adding the flavor. The following ingredients are used to season the fish:


  • Olive oil, enough for a thin coat over the fillet
  • 1 red pepper thinly sliced
  • A small handful of black or Kalamata olives cut in half
  • A teaspoon of capers
  • 1 garlic clove thinly sliced
  • 2-3 bay leaves (a few, their flavor is strong)
  • 4-6 branches of thyme
  • A small bunch of parsley
  • A dash of white wine
  • A sprinkle of lemon or lime, your choice (you can even cut a few thin wedges and toss them on the fillet)
  • A handful of cherry tomatoes cut in half

The good thing about this recipe is that you can play around with it. There are no strict measurements. It's not one of those recipes where you'll say, "Oh, I put too much of such and such, it's ruined!" Cook from the heart. You choose what taste is best for you and what measurements help you achieve that taste.

It's time to cook this fish! Fold your little fish packet on itself until it is roughly sealed. Place it on the grill at 300˚C for approximately 10-15 minutes. This time and temperature works for a half pound of fish fillet. Then, you're done! Your fish is ready for serving, and eating as well.

Although the recipe above aims to serve a small crowd, you can easily turn it into a popular dish for a backyard party. Just fire up your Crown Verity grill and impress your guests with this simple cooking technique.
